And then, much later, in the 16th century, man came along and made them orange. 🧡🥕🤨
Don’t quote me verbatim on that history but the original carrots were indeed purple and Dutch growers developed them into the orange variety and it went somewhat like that-ish. 😂💜🤍💛🧡🥕
Moral of the story: why the fuck does man have to mess everything up? 😂🤨🤷🏻♀️
Side note: the Romans believed carrots were aphrodisiacs. So, I’m developing a new carrot appetizer recipe I’ll be serving all my post-COVID in person dates from now on. 💋🥕✌🏾

Spicy cashew tofu

Recipe (yields 2-3 servings)
- 14oz firm tofu or store-bought local fried tofu cut into cubes (~2cups)
- 1 medium onion - sliced
- 3 cloves garlic - sliced
- 5-6 dried chili, seeds removed, then boiled in hot water until soft
- 1/2 cup diced green bell pepper
- 1/4 cup green onions - cut into matchsticks long
- 1/4 cup dry roasted cashews
- oil for cooking, salt to taste
- light cornstarch slurry (optional)
- 1 tablespoon soy sauce, 1/2 tablespoon stir fry sauce, 2 teaspoons dark soy sauce, 1/2 teaspoon sugar, 1/2 teaspoon salt, a pinch of white pepper *adjust sauce for gluten-free version
✅Tofu prep: If using fresh tofu, pressed and cut tofu into bite-size cubes. You can coat them with cornstarch before pan-frying to get a crispy outer layer or just pan fry without coating. Once ready, be sure to season with some salt.
1. In a heated non-stick pan with 3 teaspoons oil, sauté onion until translucent.
2. Add garlic and continue to sauté until fragrant.
3. Then, add the bell pepper, prepared tofu, chili, and sauce. Toss until all ingredients are well combined. Add the cornstarch slurry if using.
Season accordingly or add more water if you prefer a saucier dish. If more water is added, you need to adjust the cornstarch slurry.
4. Finally, stir in the cashews and green onions.
5. Serve warm with rice.

Craving this GRILLED LEMON GARLIC GREEK SHRIMP SALAD! 🍋🍤🥗 It’s delicious served solo, but adding a healthy dollop of hummus on the side is always encouraged because it makes Mediterranean meals better 👏🏻. I used one from Trader Joe’s because 1) convenience! and 2) I’ve found that hummus is one of those rare foods that tastes just as good store-bought as it does homemade. This salad would make a great addition to your weekend cookout spread (how is 4th of July in two days?!), but also makes a simple and satisfying supper for single gals 🙋🏼♀️. Have you made a Greek salad recently? If not, here’s a reminder how-to 🥰👇🏻.
GREEK SALAD 🥗 : 1 english cucumber, sliced and quartered • 1 cup cherry tomatoes, halved • 1/2 cup kalamata olives, pits removed • 1/2 cup crumbled feta • 1/4 cup @primalkitchenfoods greek dressing.
GRILLED LEMON GARLIC SHRIMP 🍋🍤: in a small bowl, combine 2 tablespoons garlic ghee or butter (melted) + 1-2 garlic cloves, minced; drizzle ghee/butter mixture over 1 lb, raw wild-caught shrimp; season with salt & pepper. Preheat grill or grill plate for ~1 minute; add shrimp and grill until pink and cooked through. Remove from heat and drizzle with more melted ghee/butter (optional); squeeze fresh lemon juice on top and garnish with parsley.

Well I have been having an autoimmune flare up slowly rising in my body since D2 was born. It’s not NORMAL (maybe common, but NOT normal) to
❌lose your hair
❌have you’re skin become dry and flakey
❌not be able to lose any weight despite healthy eating and 5 days/week of exercise for 4 MONTHS!
❌have a “moon” face and excessive inflammation in your cheeks and face
❌extreme fatigue (my baby sleeps 12 hours a night y’all)
❌have elevated antibody levels
Ok so what have I done? I eat Paleo 95% of the time, all organic. I try to get all carbs from fruits and veggies, key word “try”. Avoid food sensitivities, I take prescription strength supplements based on my bloodwork results plus medication. Try to get more sleep. Workout 5 days a week for only 25min. Skip the days when I’m exhausted. And more 🤪
This pic was taken in 2019 after I had balanced my hormones and got my hashimotos under control. I’m actually pregnant w/ Duke here 🥰. I do pretty good when I’m pregnant but once those babies come out, I totally tank. It took 3 YEARS after I had Dash to be symptom free. I’m 8 months postpartum with Duke and I’m already making good ground.

✅skin is starting to glow again
✅more energetic days than not

There’s still a long road ahead. But I’m thankful for the knowledge I’ve accumulated to get this under control. No more guessing. Just work the plan and know it takes time. And a little more time if you cheat 😬🤭
If you’re struggling with autoimmune I can not explain to you how important it is to find a great functional medicine practitioner or integrated medicine doctor. Western doctors are amazing but not so much in this department🤷🏻♀️. Keep searching. Keep trying. There are answers out there. You’re not alone. 💪❤️
