This is what a meal looks like at restaurant @restaurantalchemist in Copenhagen right now. Arguably the hardest to book restaurant in the world at the moment, with a wait list of around 100.000. (Looking for a way to skip the lin? Join @the.hungries where we often have tables available). These were the dishes from chef @rasmusmunkalchemist during the Alchemist x Mugaritz pop-up, and now we are back in the realm of deliciousness with some of the best bites we’ve had this year. The perfect omelette continues to be a favorite, but the cryo-fried mochi dough filled with Gruyère cheese and Joselito ham is definitely battling for the first place. However, the airy bread made from sheets of potato starch brushed with browned butter topped with a foam made from yeast, butter, egg yolks, and crème fraiche, and topped with thin slices of vintage 2015 Joselito Pata Negra ham might just take the gold this time. Did we cry and beg for seconds? I couldn’t tell you, you’d have to ask @jogibulava .

Noma continued to innovate for the vegetable menu this year, but also brought back some old signatures, making it one of the strongest summer seasons yet. Especially the radish tart and the marigold tempura with egg yolk & whiskey sauce were welcome revisits. Although nothing is confirmed yet, it sounds like @nomacph as we know it is ending soon, with next year being the last chance to experience the restaurant that forever changed the Nordic dining landscape. Which season are you aiming to reserve?

It’s hammertime at @restaurantlyst ! 🔨 The heavy hammer designed by @studioolafureliasson is used to break the salt dough around a perfectly cooked beet which is dipped into a delicious brown butter emulsion.

Who else loves roti prata? We’re always mesmerized by how they make this Indian flatbread. The dough is stretched very thin, almost paper-like, before it’s folded and cooked on a hot griddle (the more oil used, the crispier it gets). Roti prata is traditionally served with a side of curry (often fish or mutton). It can also be filled with various ingredients, like egg, cheese, and onion, but we’re purists. We like it plain, preferably with a slightly crunchy exterior and fluffy, soft center. We made it a mission to check out a bunch of Singapore spots – here are three of the best: 🫓 Master Prata – situated in the Alexandra Central mall. We tried both the crispy and soft versions of their roti prata. The latter was the winner, and we preferred it with chicken curry. 🪙 Mr & Mrs Mohgan’s Super Crispy Roti Prata – overall our favorite roti prata in Singapore. The curry is aromatic and flavorful, and the bread is super buttery and soft, yet crispy. Don’t miss their signature prata coins – caramelized mini versions which came with sugar for dipping. 🍛 Prata Saga Sambal Berlada – located in Tekka Centre, Little India. We tried one filled with egg, onion & chese, and one plain. The plain one was better, but could have been even more buttery. Are you more into fun dining than fine dining? If so, you’ll love Fool, a cheeky wine bar in Singapore, helmed by chef-owner Rishi Naleendra of the two-Michelin-starred Cloudstreet. Fool lives up to its elevated sibling in quality, swapping the formal tasting menu for a more relaxed à la carte experience. We were charmed by the vibe and the whimsical, artistic branding—from the playful signage to the beautifully designed menus. 🎨 The menu at @foolwine.sg had some real gems, and we loved the playful presentations. The chicken liver eclair with date and Madeira was the star of the evening – decadently dessert-like and absolutely delicious. We also enjoyed the dark rye rolls with vegemite butter, which brought back fond memories of a similar dish we savored at Cloudstreet. Singapore has one of the world’s best cocktail bar scenes. Here are the ones we visited this time: 🧄 @nutmegandclove – currently no. 64 on @50bestbars . Their cocktails had the most local Singaporean flavors of the bars we tried! I LOVED the «Yam Seng» with pandan, mezcal, lemongrass, taro, and egg white. It literally tasted like a creamy pandan milkshake! 🏠 @sagohouse.sg – currently no. 32 on @50bestbars . Great vibe! I love how they welcome every guest that walks in with a Seinfeld-like «helloooooo.» If you make a reservation, they write your names on the bar with pink chalk. 🐴 @jiggerandponysg – currently no. 14 on @50bestbars . My favorite drink was the classic amaretto sour. Don’t miss the truffle bikini! 🇯🇵 @livetwicesg – absolutely loved the vibe! A small piece of Japan in Singapore. We shared an amazing pork katsu sando. The Honeysuckle (salted orange honey, rum, and lime) was one of the best cocktails of the trip. 🗽 @manhattan_sg – currently no. 63 on @50bestbars . This is everything you imagine a super classy, upscale bar to be like! The signature Manhattan, prepared tableside on a trolley, is a must-order, of course. 🔥 @burntends.bar.sg – we popped by after dinner and they made me a custom chendol-flavored cocktail, using a pandan-infused whiskey! Is @burntends.sg 2.0 in Singapore on your restaurant bucket list? Chef @dpynto ’s cooking is better than ever! 🔥 The new venue is located on Dempsey Road, and while I preferred the convenience of the old Chinatown location, it’s definitely still worth the trek. Discover one of the world’s best bars located inside this @ConradHotels property. #ConradPartner Over the past years as TasteHunters for @TheWorlds50Best , we’ve had the privilege of visiting some of the best bars in the world. During all of our travels, we’ve never stayed in a hotel that had one of these award-winning bars on property - until now at @ConradSingaporeOrchard . Walking through the gilded doors of @manhattan_sg , we were transported back to an era of classic cocktails and fine drinking in Manhattan. Surrounded by old New York glamour, we indulged in Broadway-inspired cocktails and enjoyed tableside Manhattans using signature blends from the world’s first in-hotel rickhouse. Cheers!

Whenever we are in Singapore, we end up at @sweechoon.sg at some point during the trip. Partly because it’s the only place serving dim sum at night (why should that be a lunch thing only, anyway?), partly because it’s open until 4am every day, and partly because it’s actually some of the best dim sum you’ll have (granted that you order right – not everything is great). Here are the items you can’t miss: 🥐 baked BBQ pork pastry. Perfection! 🥟 xiao long bao (soup dumplings). A great late night version of this dim sum staple. 🍌 prawn & banana fritter. It’s a weird combo that just works! 🌿 pandan dessert bao. Because you need more pandan in your life. 🐣 salted egg yolk custard buns. I dare you to find a better version of these (and please let me know if you do).
