For cuaresma season I’m all about camaron seco, and not just for tortitas de camaron en mole, I’m talking a caldo de camaron seco con nopalitos. I made this caldito by stocking up on
@northgatemarket house brand camaron seco, which makes for a full-bodied umami and seafood-flavored broth. The blend of flavors with the nopales and vegetables made for a complete meal that is Cuaresma-inspired, satisfying, and nutritious.
Ingredients
1lb Camaron Seco
1.5 lb Nopales
1 White Onion
6 Tomatos
1 Chile guajillo
1.5 Cups of baby carrots
2 Cups of cubbed potatoes with skin
3 Cups Chicken Broth
4 Garlic Cloves
1 Chile de arbol
Optional: Lemon juice and queso fresco
Instructions
In a medium-sized pot, cook your cleaned and cut nopales with ½ a white onion, garlic cloves, chile de arbol, and a dash of salt. Cover and let them cook for about 15 minutes, stirring occasionally until they are dark green. Remove from the heat and strain.
In another small pot, cook dried camarones in 5 cups water for 15 minutes. Once done, remove the camarones from the broth and remove the skin as instructed on the reel. Do not throw out the broth.
In a pan, roast Roma tomatoes, ½ onion, 1 garlic clove, and deveined chile guajillo with 1 tablespoon of oil and water. Cover and cook for about 10 minutes, occasionally opening to turn the ingredients. Once cooled, blend and strain.
In a large pot over medium heat, add two cups of strained shrimp broth, two cups of chicken broth, three cups of water, and tomato-guajillo soup base. Add chopped potatoes and carrots. After about 15 minutes, add the cleaned shrimp and nopales. Cook for about 5-20 minutes and serve. Add lemon juice, hot sauce, and queso fresco to your liking.
